Each room on the testing floor seems to turn Gemma into a new innie.
After Gemma leaves Wellington, she has no memories of what happened to her.
Mauer also shows up on the flight disguised as an attendant and sets her up with a meal.
Gemma remembers nothing when she steps out of this room but seems to notice how her hand hurts.

The experience in this seems to specifically riff on some of Gemma’s old memories.
In an early scene, Gemma tells Mark she hates writing thank-you letters.
Lumon seems to know about her personal dislikes and seems to craft the room or many other rooms accordingly.
